Shrimp Orzo Salad with Feta
serves 4
Ingredients
- 1/2 C uncooked orzo, cooked and cooled
- 1 lb shrimp, peeled, cooked, cooled, bite-size pieces
- 1 1/2 C cucumber, peeled, large dice
- 1 1/2 C cherry tomatoes, halved
- 1/4 C scallions, fine chop
- 2 T dill
- 1/2 C feta cheese, crumbled
- 1/4 C fresh lemon juice
- 1 1/2 T olive oil
- 1 T Dijon mustard
Instructions
- Whisk together the lemon juice, olive oil and mustard. Season to taste.
- Toss the remaining ingredients in the dressing.
- Plate and serve.
